Ahh, that Christmas Pumpkin! Ahh, that Christmas Pumpkin!

Well, well there it is… that can of leftover pumpkin from the Thanksgiving feast! What to do with it? Leave it sit and hope it expires? or at least until the guilt of throwing it away abides? Lumi, in her pilgrim voice, says “NAY!” We shall redub the canned pumpkin! We will call it “Our Christmas Pumpkin!” And we will make delicious treats that fit this season out of last seasons leave behinds!For my first Instance of a Christmas Pumpkin i give you:PUMPKIN CHEESCAKE! (this is the recipe Lumi and son used almost to an exact – anything we changed will be hehehe illuminated below! – you will need two packs of cream cheese, that can of pumpkin pie, sugar, vanilla, eggs, and pumpkin pie seasoning – go buy that and then read on before you make your own!)Who doesn’t want cheesecake for Christmas? Lumi certainly does! And this one? With its sweet creamy fluffiness really stands apart from the dish we all know so well :

So toss of those tired ideas of banishing pumpkin to the fall and get ready for a Christmas full of wonder and cheesecake!Step one: Wrangle the Cream Cheese from its container:(remember all the technicals are in this recipe here, Ilumi’s just gonna tell you the fun stuff!)


Lumi’s son finally had to be told that, there was positively NO more cream cheese to be wrangled! The recipe says, “softened cream cheese”? So leave it out about ten minutes? It also says, you can put it in the microwave to soften it but that sounds a little gross to LUMI!OOh also right now, you should take out your pie crust to let it defrost a little, also about ten minutes! You can pre-bake if you like? but Lumi finds this unnecessary! Oh and the Keebler recipe calls for a “Ready Grahm Crust” but Lumi and Son used a regular one and it worked very well! Lumi was scared to bake the graham crust! But feel free to brave it, if you love a graham bottom!Okay, so after you have cream cheese and you stir it, u need to mix in the sugar with a an electric mixer or get your favorite spastic child or friend to mix it by hand!Then add the eggs, can of pumpkin, spices, and vanilla! There is an order in the recipe but after Lumi and Son beat in the sugar we just dumped everything else in!It will look like a wonderful something from Starbucks you want to eat but you can’t eat much of it in this state for fear of the eggs trying to kill you!


Once it’s all beaten, it should seem fluffy but it will still be a liquid ! Don’t panic! It will solidify somewhat in the cooking process and completely after refrigeration! After conquering panic, pour the batter into the crust and get ready to bake!HEre’s what it looked like in Lumi Cam:


This pie takes it time in the oven, fifty-five minutes pretty much exact!


then OUT and HERE’S THE IMPORTANT PART!!!!


This baby needs to refrigerate overnight before it’s really fluffy and wonderful for eating! The bonus: This dessert is made ahead of time and delicious right from the fridge!On the left here, is Lumi’s pumpkin cheesecake and these others? Wow pumpkin cheesecakes from around the internet! Lumi HAD NO IDEA that this was a thing! So yeah, if you haven’t tried it you should!!

Well there u are, a way to use that pumpkin even at Christmas! or the New Year: and here’s three others! Pumpkin bread,pumpkin chili, and pumpkin latte ! And i just read in Women’s Health that canned pumpkin makes a great stir in for Greek Yogurt! Hooray for pumpkin, at all times especially also at Christmas! There’s even TWO kids books about it!Now auntlings, Please Holiday safely and don’t lose your minds over family or other holiday stressors! If need be close the windows and the door, wrap up snuggly ,and read Auntie Wicked! Don’t be afraid to take a “me-time-out” this Christmas and maybe, like Auntie Wicked herself, splurge on a new scarf or makeup! Maybe you make this pumpkin cheesecake and you nosh it up on your own over the week with coffee! Whatever it is you need to do? Do it! and if you don’t know what that is?
